Roots at Grayson Bistro and Tavern celebrates successful first year

By Shaina Stockton

INDEPENDENCE — Roots at Grayson Bistro and Tavern in Independence recently celebrated its one-year anniversary.
The restaurant, located at 203 N. Independence Ave., opened its doors Feb. 8, 2018, offering a lunch and dinner menu in a setting that reflects Grayson County at each and every turn.
“We collected [materials] for the restaurant, including wood from every area of Grayson County; and we noticed when we were building that there was a blood line in the wood that can be spotted throughout the restaurant,” said restaurant owner Sandra Colston.
